4 tablespoons butter
1 (3 ounce) package chicken flavored ramen noodles
1/4 cup sesame seeds, toasted
1/4 cup blanched, slivered almonds
1/2 of a large head napa cabbage, shredded
4 green onions, chopped
2 cups chopped, cooked chicken breast
(1) 11-ounce can mandarin oranges, drained
1/4 cup vegetable oil
1/4 cup rice wine vinegar (red wine, or cider vinegar are also good)
1 tablespoon soy sauce
1/4 cup white sugar
In a large skillet, melt butter over medium heat. Crush noodles, place in skillet, and saute' until golden brown. Stir often to prevent burning. Add almonds and sesame seeds. Stir in seasoning mix from noodles and let cool. Toss in a large bowl with cabbage, onions, chicken, and mandarin oranges.
Prepare the dressing by whisking together the rice vinegar, soy sauce, and sugar. Slowly whisk in vegetable oil until well-blended. Pour over salad, toss to coat. Serve immediately.
