6 cups peeled and diced Granny Smith apples (1-inch pieces)
1/2 cup packed brown sugar
1/4 cup apple juice
Dash lemon juice
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon salt

Combine all ingredients in a large, heavy saucepan (I use a Dutch oven). Cover and cook over medium-low heat 45 minutes or until apples are tender, stirring occasionally. Let stand 5 minutes.

As a kid we would eat this same dish. My mom would core out the apples and stuff them with the sugar blend. We'd place 1 apple in 1 bowl, cover with saran wrap and microwave. These were a quick, tasty dessert. Yum!
