INGREDIENTS
1 cup cooked rice, cooled (I use brown - this is a great recipe for leftover rice!)
1 (15-ounce) can black beans, rinsed and drained
1/2 cup prepared salsa
1 cup frozen corn, thawed
2 tablespoons chopped fresh cilantro leaves (or 2 teaspoons dried)
1 tablespoon lime juice
Salt and freshly ground black pepper

DIRECTIONS
Combine all ingredients in a large bowl. Chill for at least one hour, to blend flavors.
