2 cups rolled oats
3/4 cup packed brown sugar
1/2 cup flaked coconut
1/4 teaspoon ground cinnamon
1 cup all-purpose flour
1 cup chocolate chips
3/4 teaspoon salt
1/2 cup honey
1 egg, beaten
1/2 cup vegetable oil
1 teaspoon vanilla extract

1. Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13 inch baking pan.
2. In a large bowl, mix together the oats, brown sugar, coconut, cinnamon, flour, chocolate chips and salt. Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well. Pat the mixture evenly into the prepared pan.
3. Bake for 20 to 25 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or you will be unable to cut them.

Heather, I am going to try these very soon. I am tired of paying for the organic ones just to keep them hydrogenated and high fructose free!!! Thanks for sharing

I tried these tonight. YUM! I think next time I'll use minichips. My hubby eats granola bars ALL day so he'll be thrilled to have them freshly made. I'll need to start making these each week- and probably a double batch. :)

Maybe a special note in the instructions- use oil in the 1/2 cup and then measure the 1/2 C honey. It will help the honey slide right out! :)

Hi Heather, just wanted to tell you how much I enjoy your recipe blog - I use it frequently. Your homemade chocolate chip granola bar recipe is one of our favorites. My son's 4th grade class had an end-of-the-year breakfast this week, and I sent three batches of these bars. Very few made it back home, and the teacher asked my son to bring her the recipe.
