1/3 cup vegetable or canola oil (I use canola)
2 large eggs
3/4 cup brown sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons vanilla
1 teaspoon cinnamon
1/4 teaspoon salt
1 cup + 2 tablespoons milk (I use skim)
3 cups oatmeal (regular or quick)
1/2 cup raisins or chocolate chips (optional)

1. In a large mixing bowl, whisk together oil, eggs, brown sugar, baking powder, vanilla, cinnamon, salt and milk. Mix well, until smooth.
2. Stir in oats, and raisins or chocolate chips, if desired. Mix well.
3. Pour into greased, 2-quart baking dish.
4. Bake, uncovered, at 350 degrees for 35-45 minutes, or until set in the middle.
5. Serve hot with warm milk poured over.
