1 cup all-purpose flour
1 1/4 cups yellow cornmeal
Round 1/2 C white sugar
1/2 teaspoon salt
1 tablespoon baking powder
1 large egg
1 cup milk
1/3 cup + 1 tablespoon canola oil

-Preheat oven to 400 degrees F (200 degrees C). Spray or lightly grease a 9 inch round cake pan.
-In a large bowl, combine flour, cornmeal, sugar, salt and baking powder.
-In another bowl, whisk together egg, milk and vegetable oil. Pour into dry ingredients and stir just until moistened. Don't overmix!
-Pour batter into prepared pan. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.

I made this last night as corn muffins to go with our Chicken Tortilla soup. They turned out sooo good. Cooking time was about the same too. . . round 20 minutes. We will be using this recipe again!
