SALAD INGREDIENTS
4 cups chopped romaine lettuce
1/2 medium cucumber, sliced
1 large carrot, diced
1/2 small red onion, thinly sliced

DRESSING INGREDIENTS
4 tablespoons olive or canola oil
2 tablespoons white vinegar
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 pinch white sugar
1 teaspoon lemon juice
1 tsp minced garlic

In a large bowl, whisk together the oil, vinegar, mustard, salt, pepper, sugar, lemon juice and garlic. Just before serving, add the salad greens and vegetables, and toss to coat with dressing.
