1 pound lean ground beef
1 small onion, finely chopped
1 tsp minced garlic
1 (4 ounce) can diced green chiles, mild
8 (6 inch) corn tortillas
1 (19 ounce) can red enchilada sauce
2 cups shredded cheddar cheese, divided
Sour cream and black olives for garnish (optional)

-Preheat oven to 350 degrees F (175 degrees C).
-In a large skillet over medium heat, cook the ground beef, onion, and garlic until beef is evenly browned and onion is translucent. Stir in green chiles.
-Divide the meat mixture evenly between tortillas. Sprinkle with cheese. Roll up and place seam side down in a greased, 9x13 inch baking dish. Pour enchilada sauce over all and sprinkle with one cup shredded cheddar.
-Bake in preheated oven for 20 to 30 minutes. Serve with sour cream and black olives.
